Creamy Chicken and Broccoli Lasagna

Ingredients:

  • 9 lasagna noodles
  • 4 boneless chicken breasts, cut into small cubes
  • 12 oz. bag of frozen broccoli, thawed and drained
  • 3 cups of shredded mozzarella cheese
  • 2 cups of ricotta cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 1/2 cup all-purpose flour
  • 4 tbsp unsalted butter
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. Cook the Chicken: In a large skillet, heat some olive oil over medium heat. Add the chicken cubes and cook until they are no longer pink. Season with salt and pepper. Remove from the skillet and set aside.
  4. Make the Sauce: In the same skillet, melt the butter. Add the chopped onion and garlic, and sauté until translucent. Stir in the flour and cook for a minute. Gradually whisk in the chicken broth and heavy cream. Bring to a simmer and keep stirring until the sauce thickens. Add the oregano, basil, salt, and pepper.
  5. Combine Chicken and Broccoli: Add the cooked chicken and thawed broccoli to the sauce. Stir to combine.
  6. Layer the Lasagna: In a 9×13 inch baking dish, spread a layer of the chicken and broccoli sauce. Then, layer 3 lasagna noodles over it. Spread half of the ricotta cheese over the noodles, followed by a third of the mozzarella cheese. Repeat this process, ending with a layer of noodles topped with the remaining chicken and broccoli sauce and mozzarella cheese. Sprinkle the Parmesan cheese on top.
  7. Bake: Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  8. Rest the Lasagna: After removing the lasagna from the oven, let it sit for about 10 minutes before serving. This rest period allows the lasagna to set, making it easier to cut and serve.
  9. Serve: Cut the lasagna into squares and serve warm. This dish pairs well with a side salad or some crusty bread for a complete meal.
